Banana fritters (or mini-pancakes) are a great idea for a whole-family breakfast buffet. They are prepared quickly, easily and ... just from two ingredients - bananas and eggs. No, this is not a recipe for cooking "banana scrambled eggs" and yes, banana pancakes are not very similar to ordinary pancakes. But they are really very tasty, soft and airy!
- By the way, it is very easy to experiment with this recipe, adjusting the "dough" to your tastes. For example, after a trip to the gym, banana fritters can be prepared with protein powder, and to please the children, add cocoa powder.
Servings: 8 small pancakes (recipe easily doubles).
Ingredients
- 1 medium banana (ripe or overripe);
- 2 eggs;
- Any cooking oil (optional);
- Condensed milk, maple syrup, jam, jam, powdered sugar, Nutella or any other sweet additives (optional).
Additional ingredients optional (you can choose several):
- 1/8 tsp baking powder (baking powder) for fluffy pancakes;
- 1/8 teaspoon of table salt;
- 1/4 teaspoon of vanilla extract;
- 1 tablespoon of not sweet cocoa powder;
- 1 tablespoon of protein powder;
- 1 tablespoon honey;
- 1/2 cup chopped peanuts and / or chocolate chips;
- 1 cup of fresh fruit and / or berries, such as blueberries, raspberries, or sliced apples.
Dishes:
- Small bowl;
- Fork;
- Cast iron or teflon pan;
- Silicone spatula;
- Blender or mixer (optional).
Recipe
- Peel a banana, cut it into several large slices and mash in a medium bowl with a fork. Continue to grind the banana until you reach the puree-like consistency (small pieces are normal). In the end, you should get from 1/3 to 1/2 cup of banana puree.
- To speed up and simplify the process, you can use a blender or mixer. Fritters in this case will be even more airy. But we wielded only one fork and everything turned out pretty quickly and easily.
- These pancakes are good in themselves, but a few additives will never hurt them. So, for example, if you want to make fluffy pancakes, add 1/8 teaspoon of baking powder. You can also improve the recipe with salt, vanilla sugar, cocoa powder, honey and / or protein.
- For the preparation of our banana pancakes, we used only two ingredients - 1 banana and 2 eggs.
- Add two eggs to the banana puree, then mix well and lightly beat the mixture with a fork. Do not be alarmed by the fact that the “dough” will turn out to be liquid and look more like beaten eggs than traditional pancake dough.
- Heat the pan well over medium heat, then melt some oil on it. If you want to cook PP-pancakes, then you can not use oil (in this case you need a frying pan with a non-stick coating).
- We heated a teflon pan on a large hob of a glass-ceramic stove at level 4. We decided not to use oil, so that PP pancake was 100% dietary.
- To make the first pancake, pour 2-3 tablespoons of "dough" on the pan.Consider that the pancake should roast almost immediately - if this does not happen, increase the heat slightly. Make a few more pancakes in the same way, leaving intervals of 3-5 centimeters between them.
- Do not make too big pancakes. The smaller they are, the easier it is to turn them over.
- The time has come for the most difficult stage of this super-simple recipe. Since the dough is very liquid, you need to turn the pancake slowly (!) And carefully. Otherwise they may burst or spread.
Proceed as follows:
- Pour the dough into the pan;
- Fry the pancakes for about 1 minute (until the underside is brown);
- Carefully lift the pancake around its entire circumference with a spatula;
- Lift half the pancake with a spatula, make sure that the other half of it is easily behind the pan;
- Turn the pancakes. Voila! If the dough spills a little when you turn, do not worry, just push it closer to the edges of the pancake. Fry the second side of the pancake as usual until golden brown (about 1 minute).
- You can turn the pancake several times, if you want to achieve even roasting.
- Continue cooking, setting ready pancakes on a plate.
- Serve warm pancakes (!) With your favorite toppings. For example, with condensed milk, maple syrup, nuts, powdered sugar or Nutella. Enjoy your meal!
